1/2 bunch of spinach or chard
3 medium potatoes or 3 yams
1 large carrot
1 tablespoon chopped onion
1 tablespoon of butter
3 eggs
1 cup of milk
2 cups of oats
salt to taste
breadcrumbs for greasing
parsley and seasonings to taste
Method of preparation
Peel the potatoes (or yams) and cut the carrot. Cut into cubes and cook in little water. Boil and chop spinach (or chard). In a bowl, beat the eggs and add the onion, parsley and the other ingredients. Lastly add the vegetables and spinach (or chard). Bake for 30 minutes in a greased pan sprinkled with breadcrumbs. Serve hot or cold.
Optional: peas, corn and olives.
