Yacon is a tuberous root, originating from the Andes region, and can be considered as a functional food which has beneficial properties for the body.
Among the benefits we have:
– Assistance in the treatment of diabetes mellitus;
– Control of cholesterol levels;
– Improves the absorption of calcium from other foods (e.g. vegetables);
– Helps protect intestinal flora.
The root contains a large amount of fiber and potassium (230mg/100g of yacon), with a low protein and lipid content.
However, the most relevant property of this food is due to its composition in relation to carbohydrates, as it contains a large amount of fructooligosaccharides – soluble dietary fiber with prebiotic properties (stimulates the production of bacteria beneficial to the intestinal flora) – in this case, inulin, being a type of carbohydrate that contains fewer calories (1Kcal/g of carbohydrate) and has greater sweetening power than sucrose (table sugar).
It can be consumed raw like fruit and should not be cooked or fried. Its leaves can be used to make tea.
ATTENTION
People with kidney problems should be careful when consuming Yacon, due to the large amount of potassium.
REFRESHING POTATO YACON JUICE WITH ORANGE

Ingredients
– 150g of Yacon potatoes
– 3 oranges
– 5 mint leaves
Method of preparation
1. Peel the Yacon potato and cut into medium-sized pieces and place in the blender jar.
2. Remove the juice from the oranges and place them in a blender along with the potatoes.
3. Add the mint leaves and beat for 10 to 15 seconds, just to mix everything.
4. Serve in glasses and, if desired, garnish them with mint leaves, pieces of orange or even Yacon potatoes.
Performance: 2 glasses of 250ml
