PANZANELLA - ITALIAN BREAD SALAD

    Ingredients:
    4 ripe tomatoes
    1 red onion
    1 cucumber
    ½ bunch of chopped basil
    1 clove of garlic
    ½ cup. pitted olives (tea)
    4 stale breads
    2 lemons
    Olive oil to taste
    Salt to taste
    Black pepper to taste

    Method of preparation:
    Cut the tomatoes into medium cubes, set aside. Cut the onion into very fine half moons, set aside. Cut the cucumber into medium squares and set aside.
    In a bowl, add the tomato, onion, cucumber and finely chopped garlic. Season with salt and let it rest for 15 minutes, until it runs out of water.
    Season the vegetable mixture with lemon, salt, olive oil and black pepper.
    Add the diced stale bread, basil and olives. Adjust seasoning if necessary.
