Beetroot peel soufflé

    Ingredients

    • 1 onion chopped parsley leaves
    • Chopped chive stalks
    • salt
    • 2 eggs
    • 2 and 1/2 cups of beetroot peel
    • 2 tablespoons of margarine
    • 1 dessert spoon of milk
    • 1 cup of wheat flour

    Method of preparation

    1. Cook the peels in little water.
    2. Grind the peel with the onion, chives and parsley.
    3. Sauté the mixture in margarine for 2 minutes.
    4. Add the egg yolks, wheat flour, milk and salt, stirring constantly.
    5. Add the beaten egg whites and mix gently.
    6. Place in a greased pan and bake in a preheated oven at 200°C for 20 minutes or until golden.
